Astrid´s stuvade vårvitkål med muskot & knastrigt Isterband
Mumsfillibabba var det.
Men vad?
I min gröna ungdom hade jag en norsk svärmor.
Om det var hennes alldeles egna specialitet eller om det är en typisk norsk husmanskost, tog jag aldrig reda på. Det fick helt enkelt bara bli min egna vårspecialitet. Och det speciella med detta är mängder med riven muskotnöt. Massevis. Har funderat ett tag hur det skulle lösas utan stabbig bechamelstuvning. Mozarella fick bli lösningen och det blev lysande gott. Särskilt ihop med grädde och smör. Och särskilt till isterband.
Ingredienser: Färsk vitkål, mozarellaost, grädde, smör, muskotnöt, isterband, salt & peppar.
Skär kålen i större bitar och glöm inte att provsmaka - flera gånger. Koka den mjuk i saltat vatten.
Låt rinna av ordentligt. Picka isterbanden med en gaffel och stek i halvhet smörpanna.
Koka ihop grädde tills hälften kvarstår. Vispa ner en smörklick.
Tillsätt osten i skivor och låt smälta utan att det kokar.
Krydda med ansenlig mängd nyriven muskotnöt. Salta & peppra. Tillsätt kålen.
Servera gärna med lite stekflott (eller som min portion - med mycket stekflott)

Jag har norska bekanta och till jul äter de alltid norsk surkål som kokas med äpple, smör, buljong, ättika och kummin.
Ska prova detta. Mozarellaost har jag aldrig använt, man lär så länge man lever. Ser gott ut.
Ja jäklar, nu har hon gjort det igen! Fått mig att drägla av hunger...

Åh så gott! Och igår gjorde jag något som blev rätt gott. Tog färsk vitkål, förvällde den och la i smord form. Kluttade på mer smör och DRÄLLDE över fet ost. In i ugnen tills osten smälte och blev lite guldbubblig så där... Snacka om att det smakade.
