Fläskfile´Oscar
Fläskfilé säljes ofta till hyggligt pris. Lagom att ha på lut i frysen. En påse räkor likaså. Bearnaisesås ingår väl numera i husmanskosten för LCHF:are. Eldoradosparris är både billiga och goda.
Med ovanstående har vi grunden till festlighet. Tämligen enkelt, mättande, gott och framförallt prisvärt.
Bearnaisesås finns det recept på här.
Skär filén i bitar om 5-7cm. Snitta på mitten, men inte igenom. Banka ut till fjärilskotletter. Stek i hett smör. Krydda med salt och vitpeppar. Ös gärna smör under stekningen för saftigare resultat.
Grilla räkorna in blanco. Salta och pudra gärna antingen chilipeppar eller vitlökspulver över. Låt vila.
Värm sparrisen i sin glasburk. Häll av vätskan och häll ut dem försiktigt på en tallrik (akta knopparna).
Komponera portioner. fläskfilé + sparris + sås och sen räkor på toppen.
En grillad tomat med några droppar av såsen kan vara ett extrafestligt inslag.

Det där med bearnaise är svårt tycker jag. Kan man spara bearnaisesås? Kylen, frysen? Jag minns att det fanns att köpa fryst förr men det har de slutat med. Den där pastishen som finns att köpa går jag inte nära. Rapsolja...
Theresa - Man "kan" spara hemslagen Bearnaise, men den är svår att värma då den konsekvent skär sig. Däremot är den inte oätlig för det. Tvärtom, smakerna är ju desamma. Dock inte så kul att servera i tex en såsskål. Den "går" att laga till slät sås igen. Kall kan den dock användas som ett aromsmör med bibehållen struktur. Varför inte äta upp alltsammans på en gång istället ;-)
Bearnaisesås av typen halvfabrikat går helt bort för mig. Det är liksom allt annat än bearnaisesås.
