Mums, det där ser gott ut! Nu när vädret blivit lite svalare passar det bra med grytor!

Jag passar på att ställa en fråga här apropå något du skrev för rätt så länge sen. (Jag har även dragit igång en tråd på Kif om mina frågor om VAFÖR man ska göra si eller så vid tillagning i allmänhet). Du skrev, om auberginer, att du steker skivorna direkt i stekpannan utan att salta innan, "för jag gillar inte överkurs". Överallt annars i recepten står det att man ska salta och låta skivorna stå och vattna ett tag. I boken "Kokonsten" av Anne Willan står det att man gör så "för att dra ut den ibland beska saften" och att "det gör grönsaken fastare så att den håller formen bättre". Nu vet jag varken ut eller in! Hjälp!

Latmask - gör som jag: det som passar bäst. Det finns inga "ska" eller "inte ska". Jag upplever inte saften från aubergin som besk. Inte alls. Däremot upplever krånglighet och tidsåtgång i för stora mått av att vara så omständig. Jag steker/bryner/grillar auberginen torr och slipper därmed det där extramomentet. Och så slipper jag extra salt. Dessutom blir ju aubergin sladdrig hur än man beter sig. Aubergin är endast fast när det är in blanco. Jaaa! Va´fiffigt, då slipper jag den varma ugnen. Och dessutom finns allting i kyl o frys. Har suttit och suktat över grannens doft av kalops som kommer från det öppna fönstret, så nu ska jag ge igen ;o)

Det där med Sambal Oelek i grytan måste jag testa! Ser supergott ut, och låter gott också på beskrivningen. Kul med hösten, för då har man liksom en ursäkt att göra mustiga grytor. Tack för underbart recept!!!

Jag har provat att slänga ned trokade "hela" nyponskal från hälsokostaffären. De är lite halvsöta. Jag ska också prova med att slänga i rönnbär jag hittat i närheten av hemmet. Jag har gjort en rönnbärsröra som man ska ha till viltkött, men den blev lite för sur. kanske var rönnbären inte tillräckligt mogna eller så använde jag för lite socker.
