Rostas med broccolisallad, vinglace & kapris
Nu känns det lite som en upprepning, men jag bloggar ändå. Rostbiff kan man aldrig få för ofta. Och det passar ju såhär i sommartid extra bra på picknick. Som alternativ till den sedvanliga potatissalladen bytte jag bara ut pluggen mot broccoli som fick torka ur efter förvällning på hushållspapper. Jag kan ha fel, men kapris är visst kolhydratsfritt. Åtminstone på innehållsförteckningen på den burk jag har. Gott är det också.
Ingredienser: Rostbiff, rikligt med krossad peppar (jag kör blandad), salt och lite fett.
Ingredienser broccolisallad: Kall förvälld broccoli, majonäs, dijonsenap, lök (flera sorters), creme fraiche.
Vill man ha rosa kött rätt igenom kallas den fransk och tillagas sakta i svag värme (125gr) i ungefär 1½timma/kg. Vill man ha grå kanter och rött innanmäte kallas den engelsk och tillagas varmare (175gr) i ungefär 1 timma/kg kött. Jag lagar fransk och lägger bara oredigerat köttstycke i gjutjärnsppanna, droppar några droppar smör eller olja som kryddorna får fastna i samt saltar och steker i ugnen från start. När den är klar får den vila orörd ett slag och lyftes sedan över på annat fat för att kylas.
Glacen tillverkas genom att reducera den tillvaratagna köttbuljongen ihop med någon deciliter rött vin + 1 dl grädde och en skvätt kinesisk soja tills dess knappt något alls återstår - mer än en seg tjock sås. Ta grytan från plattan och montera ner smörklickar. Min mättades med 75gram.
Salladen: Låt kolhydratsfolket skala/skrapa sin egen plugg och koka tärningar som kyles. Använd alltså samma grund, men blanda salladerna för sig.
Droppa den starka och smakrika såsen lite försiktigt över köttet. Låt var o en själv välja tillbehör. I det här huset älskar barnen rostbiff & potatissallad. Jag själv älskar numera broccolisallad.
