Lite Turkietinspirerat idag. Tzatziki på spenat istället för den sedvanliga gurkan. Det blir rasande gott!
Tyvärr hade jag nån slags gammaldags övertro på kotletterna. Tänkte mig att snitta fram en liten "ficka" som skulle fyllas, men det ville sig inte. Fabriksstyckade kotletter är för tunna. Istället skars halva kotletten fri från benet och köttet bankades ut till större blaffor som tillät fyllning och vikning. Schnitzlar eller benfri kotlettnoisette skulle funka om inte bättre så i alla fall enklare.
Ingredienser: Schnitzelvänligt kött, salami, fetaost, youghurt, vitlök, bladspenat (fryst eller förvälld färsk spelar ingen roll), ägg, smör att steka i.
Fyll köttet med salami och fetaost. Vik ihop och doppa i uppvispat ägg. Stek på medelgod värme i rikligt med smör. Låt gärna någon kvist färsk ört steka med.
Gör under tiden spenattzatziki. Krama ur spenaten väl. Blanda youghurt, spenat, färskpressad vitlök, några droppar olivolja, salt och mald peppar av valfri sort. Låt dra i kyl tills maten är klar.
Stek gärna purfärska itudelade vitlökar med skal, på eftervärme i stekflottet. Dessa blir så mjälla att de bara liksom hoppar upp ur sina gömmor när de är dags att inmundigas. Servera gärna med överbliven fetaost och goda oliver därtill.

Vid ett tillfälle lyckades jag få tag på styckmästaren på Willys, han hade inga problem med eller invändningar mot att stycka kotletterna som jag ville ha dem, med svålen och allt fette kvar. Tyvärr var ju grisarna undernärda, så det blev inte mycket till fettrand ändå. Men kilopriset blev lägre än för de standardstyckade. :-)
Jag fick även en hel bit av en kotletttrad som annars skulle ha styckats till fem kotletter, perfekt att helsteka i ugnen.
Ett tips är alltså att hitta ett ställe som kan stycka som man vill ha köttet.
