Helkokt blomkål med bacon & feta
Om man vill snitsa till det är det lämpligt att damma av en gammal korköppnare med trähandtag. Metalldito blir alldeles för heta, att ta i. Att skruva in korkskruven i blomkålens rotstock och förkoka i cirka fem minuter gör att man kan handskas med hela huvudet. Dessutom kokar den inte sönder så som annars är ganska vanligt med just blomkål. Anrättningen blomkål & bacon är ju klassiskt och lika gott varje gång. Idag tillsatte jag också ett lite paket Aptina Fetaost och det blev en succé.
Ingredienser: Blomkålshuvud, bacon, lite lök, vispgrädde, fetaost, creme fraiche, riven ost.
Sätt ugnen på 250 grader. Koka blomkålen i lättsaltat vatten i ungefär fem minuter. Bryn bacon och lök. Slå på grädde och tillsätt fetasost. Puttra och avsluta med en klick creme fraiche. Undvik att krydda då smakerna är tillräckliga in blanco. Lägg stuvningen i botten på en form. Ta upp blomkålen och låt rinna av ordentligt. Skruva ur korken och vänd blomkålshuvudet rätt ovan stuvningen. Strö över god riven ost ( tips: trä en påse direkt på rivjärnet - se bild). och gratinera tills det hela antagit en tilltalande färg.
Ät så Du blir mätt, men inte tills Du storknar.

Det är så vasst att jag till och med kan riva direkt av en blit kallrökt och lufttorkat fläsk som jag har hängande framme i köket. Det är jättegott att riva loss kanske en matsked av det och strö på en enkel omelett till sammans med lite parmesanost, jättegott! Man bör dock komplettera med en stor klick smör eftersom fläsket är lite magert och närmast kan betraktas som koncentrerat protein, det krävs väldigt små mängder av det för att man skall bli mätt!
