Erkänner mitt sommarberoende nu när det ligger bakom mig. Har gått från nolltolerans på Chevré till cravings på bara ett par år. Rödbetor likaså. Man ska aldrig sluta förvåna sig. Och är det inte värre än god och hälsosam mat, så ska man vara nöjd. Jag är nöjd.

Råa eller osötade färdigkokta rödbetor - 2 små per pers
Kokande saltat vatten
Blandade salladsblad, gärna lite krisp
Ett par körsbärstomater per port
Tex 7 st valnötter
Gurkstavar
Salladslök - kan uteslutas
En rejäl skiva härlig Chevré
Vinegrette
Några varv på pepparkvarnen
Tvätta de råa rödbetorna och sänk ner dem i det kokande och saltade vattnet med skal, rot och precis som de är (skär man av nåt innan koket, så förblöder dom). Koka i 30-40min, känn efter med provsticka, det är inte gott med för hårda. Häll av vattnet och skala rödbetorna när de svalnat såpass att Du kan ta i dem.
Mixa ihop salladen eller bygg ett toppig historia. Blanda vinegretten, den som "tål" det, kan tillsätta någon droppe flytande honung för den perfekta brytningens skull. Vrid över med pepparkvarnen och sätt fart till bords!
