Skagenpaj med röd pizzasallad
Här kommer inspiration till en matig, festlig och sockersnål paj som jag valt att kalla Skagenpaj. Man kan naturligtvis fylla med vad som helst annars. Förutom innehåll behövs cirka 45minuter.
Ingredienser paj: Ägg, grädde, smör, kräftstjärtar, stenbitsrom, sparris, creme fraiche, dill, purjo och ost.
Låt lite smör bryna i en pajform. Sila kräftstjärtarna från spadet. Knäck sex ägg men ta undan två gulor. Slå ihop en stanning med ½dl kräftspad och ½dlgrädde. Grädda en torr omelett.
Rör under tiden ihop CF med äggulorna och romen. Krydda med en aning peppar och finklippt dill (torkad eller fryst går utmärkt). Finns det mjukost hemma kan det oxå röras ner. Tidigare recept här.
Skär sparrisen i mindre bitar och låt dem rinna av. Fördela lite purjo i botten på pajskalet och strö över kräftor och sparris. Slå över såsen. Täck med fet ost. Grädda en kvart i 225grader.
Ingredienser sallad: rödkål, persilja, vitvinsvinäger, olja, salt, oregano och grovt krossad peppar.
Koka upp olja, vinäger och kryddor. Hyvla kålen fint med tex osthyvel. Gillas persilja kan det med fördel hackas ner. Häll den heta dressingen över den kalla kålen och krama ihop den, alt stöt med mortelstöt.
