Chokladrulltårta med tryffelkräm & hallon
En mycket god vän ska uppvaktas för sina hela 90 år. Ibland är det så i livet, att man tar lite av festens udd genom att inte hålla tillgodo. Så, jag tänkte ta med mig eget. Frågan var bara "vad". En rulltårta såklart! Detta är resultatet av ett första försök. Eventuellt får jag revidera längre fram, men den är godkänd, jag lovar. Om man har panikartat godisbegär eller fikafrämmande är på ingång är det kanske inte absolut nödvändigt att kyla över en hel natt, men några timmar (3-4) går det nog åt. Alternativet är förstås att fylla en bråttomvariant med vispad grädde eller CF.

Ugn 200gr
Ingredienser botten
6 ägg
½-1dl sukrin
1 msk fiberhusk
200gram philadelfia
1 dl malda eller hackade hasselnötter
0,5 dl cacao
1½ tsk bakpulver
vanilj
2 bakplåtspapper
lite (strö)socker
Ingredienser kräm
100 gram mörk choklad av god kvalitet
1½ dl vispgrädde
25 gram bregott eller smör
smaksättare om du vill
2 gelatinblad
0,5 dl tunn kall vispgrädde
Hallon
Arbeta med elvisp eller maskin. Vispa äggen riktigt fluffiga och ljusgula tillsammans med fiberhusk och socker. Jag tog den mindre mängden sukrin först och tillsatte andra delen senare vilket ev var dumt, slutresultatet blir sötare än smeten smakade. Tillsätt osten och ser till att allt blir en jämn smet. Vänd ner nötmjölet/hacket och sikta över cacao och bakpulver. Smaksätt med vaniljessens eller den vanilj Du föredrar bäst. Rör samman smeten med stora rörelser utan att vispa. Häll smeten i en bakpappersklädd långpanna och hjälp ev till att skapa en fyrkant ca 5 cm innanför formen. Grädda på ugnens mittenfals i ca 12-14 minuter.
Lägg medan kakan gräddas de två gelatinbladen i kallt vatten.
Strö en aning socker på övre ytan när kakan tagits ur ugnen - detta för att ytan inte ska kladda fast och trasas sönder när man rullar. Jag föredrar vanligt strösocker efter att ha bränt mig ordentligt på het sukrin en annan gång. Placera ett nytt bakplåtspapper på ytan och lägg över en plåt. Vänd på hela festen och dra direkt av pappret som kakan har gräddats på. Rulla kakan så snart det är möjligt till en tom rulltårta. Rulla in den i pappret och låt svalna en stund innan den ställs i kylen, gärna över natt.
Ge grädden ett uppkok. Bryt ner chokladen i mindre bitar och låta smälta i den heta grädden som tagits från plattan. Rör hela tiden. Tillsätt smöret och gelatinet och fortsätt röra, ev med en ballongvisp tills krämen är helt slät. Smaksätt med tex vanilj eller lite konjak om man vill. Låt kallna ordentligt, helst över natten.
Dag två: Tillsätt 0,5 dl i omgångar till den kalla chokladkrämen och vispa riktigt len och luftig med elvisp. Rulla upp kakan och bred chokladkrämen över hela ända ut i kanterna. Strö över lite hallon. På min är det torkade hallon för att jan inte hade något annat, men färska eller upptinade och avrunna blir säkert lika bra. Rulla en tät rulle och avsluta med skarven nedåt. Skär i lagom skivor.
