Slottstek med gräddsås, kokt blomkål & Cornichons
Det fanns nätad fransyska riktigt riktigt billigt vid juletid. Dragplåster i den ompackade färsens efterdyningar kan tänkas. Några av dem fick följa med mig hem. Magert javisst, men såsen kan med fördel fettas upp. Den här anrättningen kommer bäst till sin rätt om man har gott om tid på sig. Beräkna minst en timma per kilo kött.
Ingredienser: Nötkött i bit, lök, sardeller eller ansjovis, morötter om man vill, hel vit & kryddpeppar, timjan, enbär, lagerblad, soja, visprgrädde & smör.
Bryn köttet runtom i hett smör. Låt grönsakerna fräsa med ett slag. Tillsätt kryddorna, de hela fiskfiléerna och slå över minst 1dl soja per kg kött. Dra ner värmen och sätt på lock. Ställ klockan och låt sjuda.
Ta upp kött och grönsaker. Reducera buljongen under vild kokning tills hälften återstår. Slå då på en trea grädde och koka tills det antar en simmig konsistens. Dra då från värmen och mata med smör under vispning.
Ett trevlig tilltugg för oss som gillar inläggningar, men skyr socker är Cornichons. Salta ättiksgurkor. Utan tillsatt socker. Eldorados innehåller tre gram kolhydrater per 100g.
Och är mycket goda.
Vanligt folk serveras kanske kokt potatis, svart vinbärsgelé och de kokta morötterna till.
Vi andra är fullt nöjda med kokt blomkål, kött och fet sås in blanco.

Maja - Inget kan bli bättre än mammas järngryta. Slottsstek kan lagas av det mesta nötkött... kanske inte oxbringa och svans, men annars så ;-)
Jag undrar om inte oxbringa kan gå att göra något snarlikt med också? Känner man bara till grundregeln att ju senigare kött desto längre koktid vid lägre temperatur så kan man laga god mat med alla styckdetaljer.
Jag har för mig att oxbringa gärna används till riktig barbeque, alltså lång tillagning vid mycket låg temperatur och lite rök. Barbeque är alltså mer likt något mellanting mellan varm- och kallrök än grillning. Även det segaste kött blir så mört att man inte behöver skära det utan kan riva loss köttet
finfördelat med gaffeln. Glöden skall alltså inte ligga rakt under köttet vilket även innebär att man kan ha en skål under för att samla upp det som droppar från köttet, det gör man sedan en underbar sås på.
