Gräddstuvad LCHF-pytt med ägg

Rester, småsnuttar och eller nyförvärvat, men för lite att bli nånting kommer till pass. Det blir en annan dag alldeles ljuvligt. När det får gifta sig med andra smaker och dofter. Jag köper gärna sånadär "spillgrejor" och slänger i frysen. Stundom är jag flitig nog att hacka det först. Och när man sen har tillräckligt många småpåsar i frysen, tinas de och anrättas.
Man kan naturligtvis koka sås enkom för ändamålet. Den här gången användes överbliven sås från Sambalkotletter och för all del även kotletthack. Gissa hur gott det blev...
Ingredienser: Hackat av lite rökt, lite kokt, lite stekt, lite korv samt aubergin, squash, lök, brunsås, smör och grädde.
Börja med att koka en stadig sås. Min överblivna sås fick reducera tills hälften återstod och den var då i lagom konsistens. Tärna aubergin och squash. Vätska ur med salt medan köttet tärnas i samma size. Fräs i hett smör i omgångar och låt absolut grönsakerna steka al dente för sig. Blanda köttet och slå över såsen. Koka ihop en aning och spetsa med grädde till lagom konsistens. Rör sist ner grönsakerna.
Servera med knaperstekta ägg och kanske lite Cornichons.
