Wallenbergare med kålmos och gräddstuvad ostronskivling
Som sagt, tiden går.
Min matblogg med inriktning på LCHF har hunnit bli ett helt år. Jag har publicerat 146st inlägg, lagt in 320 st bilder och vi tillsammans har kommenterat 578 gånger.
Det måste firas!
Ingredienser: blomkål, broccoli, ostronskivling, purjolök, kalvfärs, äggulor, grädde, smör, salt & peppar.
Koka buketter av kålsorterna i lättsaltat vatten - obs släng inte rotstockarna, de ska vi använda till nästa recept. Här finns recept sen tidigare. Ett annat sätt att laga är att hälla av vattnet när kålen är färdig och slå på grädde som får koka in de sista fem minutrarna. Mosa med visp och rör ned en rejäl smörklick. Salta & peppra.
Bryn svampen i hett smör. Tillsätt purjon. Låt vila.
När man gör Wallenbergare (receptmått finns det gott om på webben) är det viktigt att ingredienserna är riktigt kalla för att färsröran inte ska skära sig. Använd gärna elvispen med degkrokarna. Blanda först ner äggulorna och kryddor. Strila under jämn vispning ner grädden. Smeten ska bli riktigt lös och ohanterlig. Klicka ut i brynt smör och jämna till med sked doppad i vatten eller fett. Stek 3-4 minuter på var sida.
Blanda ner svampen i fettet från biffarna. Bryn och slå på grädde. Puttra tills det tjocknar. Krydda med nymald peppar och lite salt om det behövs. Servera med lingon - för den som inte bangar för surt, går okokta finfint.
Vaniljpannacotta med hallon & björnbär
Ingredienser: Grädde, vaniljstång, gelatinblad, bär.
Om man så önskar går det naturligtvis bra att tillsätta socker eller sötningsmedel.
Själv tycker jag det är fullgott utan.
Koka grädden så att den reducerar en aning. Mjuka upp gelatinbladen genom att låta dem ligga i kallt vattenbad. Skrapa ur vaniljstång och låt både frön och stång koka med. Förbered bären och lägg kanske några i botten på serveringskärlet. Ta grädden från plattan. Rör/vispa ner det mjuka gelatinet. Häll upp i formar. Kyl i två, tre timmar. Garnera så som det passar bäst. Koka gärna några av de trasiga bären i en gnutta vatten och passera genom sil för att få lite sås till garnering.
