Ingredienser: Kantareller (eller annan svamp), buljong, lök, grädde, creme fraiche, smör, salt & vitpeppar, ost, äggula.
Koka ur benen tillsammans med nån lök, lite kryddor och lite tomatpuré. Sila och reducera och detta kan göras flera dagar i förväg. Koka upp buljongen. Fräs kantarellerna tillsammans med lite finhackad lök, i smör. Ös över två tredjedelar svamp i buljongen och spar resten. Tillsätt grädde (en trea) och en redig klick creme fraiche. Krydda med salt & peppar och ev någon ört (färsk oregano). Mixa soppan så den blir alldeles slät. Rör ev ner en klick smör som slutfinish.
Klipp eller hacka kantarellerna en aning. Blanda med riven ost och en äggula. Klicka ut på bakplåtspapper och grädda i 250gr tills de bubblar, blir gyllenbruna och ger ifrån sig en härlig doft.
Bjud kolhydratsfolket en ostmacka till. Vi andra äter hela plåten med kantarellostplättar.
