Helstekt kotlett med balsamsås och örter
Inspirerad av ett krogbesök komponerades idag nåt jag med all säkerhet kommer att göra igen. Egentligen blev mitt resultat långt ifrån själva inspirationskällan, men det lilla jag hämtade där blev verkligen pricken över i. Nämligen örtoljan.
Ingredienser: Hel kotlettrad med ben, torkade eller färska hackade örter (rosmarin, salvia, ingefära), pressad vitlök, rapsolja, salt, vitpeppar, creme fraiche, grädde, balsamvinäger eller rött vin + lite valda grönsaker & svarta oliver.
Vrid upp ugnen till 175gr. Snitta ett rutmönster i fetthöljet på köttet. Blanda/stöt örterna & kryddorna med vitlöken och saltet. Blanda ned oljan och låt dra och svälla en stund. Gnid in köttet med kryddblandningen och placera i stekpåsen. Sätt in köttpåsen på ugnsgallret och stek 1½-2 timmar.
Häll ur buljongen och låt stormkoka i gryta tills en tredjedel återstår. Slå på en gräddskvätt och en burk creme fraiche. Vispa såsen slät och låt sjuda. Smaka av med ett par msk balsamvinäger eller en halv dl rött vin. Ta grytan från värmen och vispa ner så många smörklickar som samvetet tillåter.
Mixa färska örter med aning salt i kallpressad rapsolja.
Woka tex lök, vitlök, paprika, broccoli och kalamataoliver i smör.
Krydda sparsamt med salt & peppar.
Komponera Din tallrik och droppa örtolja lite här och där. Servera med potatis till kolhydratsfolket medan vi andra ev tar ett kryddsmör till.
Wokar du i oljan? Är det nyttigt? Oxiderar den inte?
P - Absolut inte. Här steks och wokas det i äkta smör ;-)
Jag hade nog hellre använt ghee, måste komma mig för att göra lite sånt snart. Det klarar ju högre temperaturer än vanligt smör.
Oj, ett nytt härligt recept med fläskkött :o) Så mycket griskött som jag äter så är detta verkligen välkommet! Ser väl ut som en liten grymtare snart, fast en smal sådan naturligtvis ;-)
Det finaste fläskköttet jag någonsin fått tag på hittade jag under en resa i Halland, i gårdsbutiken Gudmundsgården strax utan för Slöinge, inte långt ifrån Halmstad. Mitt första intryck var när jag tittade runt hörnet på grådsbutiken och såg grisarna gå och böka på ängen på baksidan av byggnaden! Men skall någon dit så rekommenderar jag att man ringer först, gärna en vecka innan om man kan, och ber dem stycka upp kotletter m.m. med fettrand och svål kvar, annars skär de bort dem eftersom ingen köper dem annars. :-( Jag skällde lite på dem för det, men de var lika ledsna för det som jag, de kan ju det här med kött och vet vilken skilnad det är om fettrand och svål är kvar eller inte. Kan passa på att rekommendera deras bratwurst också, de är tyskar och kan det här med korv! Där är inte korv som här ett sätt att göra sig av med skräpet, utan där är korv lyxmat! En bratwurst med 98% kött och resten vitlök låter väl inte fel? Dessutom blir det mer fett kvar till annat i stekpannan när man stekt en sådan än när man stekt ett helt paket normalt bacon! :-)

Åh, jag får flashbacks. Det är från ett femtontals år sedan. När min älskade vovve (Basset Hound)och jag for till svampskogen. Han blev så målinriktad på momangen när vi kom dit och stack rakt in i skogen med mig på rak lina. Och visade vägen. Tills det tog tvärstopp och hanbörjade morra. Strax därpå hördes skrik. Och grymtningar. Där inne i djupaste urskogen stod nämligen de två fetaste och finaste alldeles ljusrosa (grisskära) julgrisar jag nånsin sett. Deras hem var en jättestor hage med blandskog och äng. Och under varsin gran hade man inrättat spiltor där grisarna hade ren och fin halmbädd. Den lilla torparstugan som fanns i anslutning verkade obebodd. De där julgrisarna blev våra vänner hela den hösten. Tänk så underbart det vore om alla djur fick så humant livsvillkor.
Jag kan även garantera att de efter slakt blir betydligt godare och hälsosammare mat åt oss än något vi kan köpa i butikerna idag.
