Jag är egentligen inte så förtjust i att äta omelett, men tillagar det gärna åt andra. Idag gifte sig dock smakerna även för mig.
I en skål knäcktes tre ägg som hastigt men samtidigt sparsamt slogs ihop med en skvätt grädde - det kan nog ha varit ½dl. Man ska passa sig för att övervispa äggstanning. Under tiden tinades 1dl räkor i micron och en röra på creme fraiche, majonäs, dill och skaldjursfond blandades för sig.

När omeletten började stanna skakade och drog jag pannan i cirklar tills den tycktes helt stannad, men ändå var krämig på toppen. Då fick räkorna hoppa i och de spreds över hela omeletten och lika fort vändes ihop och skapade en halvmåne. Då först stängdes plattan av och omeletten fick anta färg stilla och fint i kanske en kvarts minut för att sedan vändas upp på tallriken.
