Under uppväxten utsattes vi barn ganska ofta för modenyck som modern skapade i köket. Jag minns tex de första varma mackorna, den första tonfisksalladen och kassler hawaii mycket väl.Precis som jag minns Neptunigratäng.
Ett modenyck som försvann. Tills det dök upp i en veckoblaska i min fullvuxna ålder. Klippet är från min receptbok.
Nåt mer underbart får man leta efter. Därför att gratängen bjuder alldeles sagolika smaker.
Champinjonkräm inhandlas hos välsorterade matuvaruaffärer och brukar stå på svamphyllan. Kolhydratmängden vet jag inte, men innehållet lär ska vara endast passerade smörkokta champinjoner.
Jag valde att inhandla den dagens billigaste fisk i min affär. Naturligtvis går det lika bra utan spättafiléer. Jag valde Alaska pollock plus laxfile.
Ingredienser: Skinn och benfri fisk - gärna blandad variant.
1 burk champinjonkräm
1 burk svart kaviar
Dill, citron, vitpeppar
Vispgrädde
Lägg fisken i botten på en form. Salta endast om Du är addicted på salt (sältan från romen räcker). Pressa över lite citronsaft. Peppra. Stryk ut champinjonkrämen på fisken. Dilla och klicka över kaviaren. Vispa grädden hårt.
Tänk på att klicka ut grädden sked för sked utan att kaviaren kladdar till det hela. Stryk försiktigt
med en lilleman eller en palett för bästa resultat. Kaviaren ska bara smyga upp på ytan under gratineringen.
Grädda i 225gr i cirka 20 minuter. Täck ev med folie eller annat skydd på slutet.
Neptunigratängen serveras gärna med pressad potatis eller ris till kolhydratsfolket.
