Helstekt fläskkarré med vitlök & sambalsås
Fläskkarré är kanske inte så rasande skojigt. Särskilt inte utan plommon. Men i stekpåse blir den så rolig att man (kocken) blir topprankad. Den ena av boysen sa vid middagsbordet att: han skulle försöka sig på att skriva på min blogg minsann. Och berätta att det var det godaste han nånsin fått hos mig. Och att han f.o.m nu alltid vill ha samma mat. Om det nu är så att Konsum tänker kränka ut karré för 29:90/kg för all framtid, får han allt passa sig. Drömmar kan gå i uppfyllelse.
För den vitlöksskrämde är det bäst att jag påpekar finessen med att tillaga vitlök. Särskilt hel och särskilt under lång tid. Aromerna blir nåt helt annat än man föreställer sig.
Ingredienser: Oredigerat fläskkött, vitlöksklyftor i mängd, rosmarin, soja, salt & peppar, stekpåse.
Ringla eller pensla soja på hela köttet runtom. Strö över rikligt med rosmarin. Pressa över vitlök så att ytan täcks (kan naturligtvis uteslutas, men varför?). Salta & peppra. Låt några vitlöksklyftor steka med i påsen att ha som dekoration. Stek i 150-175gr, en timma per kilo kött.
Sås: Gör som i detdärandrareceptet: blanda soja, creme fraiche, grädde och sambal oelek, men koka det den här gången i gryta tills den tjocknar ordentligt. När köttet är färdigt silas buljongen ner i den tjocka såsen. Koka/reducera till lagom konsistens. Ta kastrullen åt sidan. Klicka ner smör och vispa såsen blank.
Tina haricot verts. Ringla över en god olja, pressa i en klyfta vitlök, salta och mal rikligt med peppar över. Blanda.
Servera med kokt potatis till kolhydratsfolket. Vi andra tar lite mer av den feta såsen.
