Jag älskade dem i alla fall.
Svålarna alltså....
Häromkvällen frågade jag tjejerna i delidisken i "min" affär om det fanns möjlighet att få köpa en riktigt stor bit svål med tjock fettrand. Hon fick mitt mobilnummer och idag har jag träffat slaktaren efter påringning. Och jag har gjort mitt livs första egna Fläsksvålar. Det luktar gris i hela det Airamska hemmet, men himmel vad goda de blev.
(klicka för större bilder)Två kilo färskt fläsk putsades fritt från köttrester och skars i olika bitar. Somliga stora, en del små. Några fyrkantiga och andra i strimlor. Samtliga placerades i långpanna och ställdes i ugnen i 200-225gr.
Ganska snart smälte fettet och ett knastrande ljud började höras från ugnen. En del svålar guppade runt och vände sig själva och övriga hjälpte jag runt med en lång stekspade. Efter ca 45 minuter hade de antagit tillräckligt mättad färg för min smak. Med stor försiktighet och en god portion balanskonst togs långpannan ut ur ugnen och svålarna fick vila på ett uppsugande papper. De saltades medan de fortfarande var ljumna. När fettet svalnat hälldes det i lämplig bytta.
I efterhand har jag funnit recept på riktiga Hjemmelavede flæskesvær. Och där fick jag lära mig att svålarna först ska få ett uppkok i vatten. Sen silar man dem och saltar innan de åker in i ugnen, på samma vis som mina fick göra.
Nästa gång ska jag också prova att skära bort rätt mycket av fettet på en del - så att det "bara" blir krispiga kanter kvar. Fastän jag hör till dem som verkligen gillar det där halvmjuka fettet med hård kant...;-)
